In November 2018, Mountain River, along with DINZ Chef Shannon Campbell, visited Chefs in the Ski area of Salen, Sweden. The area has about 1 million visitors per year and is a popular ski destination.
We visited some of the the bigger restaurants and presented Mountain River cuts. The concept was to have a 20 minute presentation on NZ Deer Farming, animal welfare, sustainable farming, and nutritional advantage compared with other red meats. We always get a lot of questions about this topics and they seem to be very important for the Chefs.
After the presentation, we cooked the meat together and discussed recipes and and other issues connected with cooking. In the evening, Shannon presented small dishes in Menigo's house fair, where we also answered a lot of questions about NZ farming and our cuts.
