For more than a year our team in Scandinavia have been developing a new formulation of a popular Scandinavian venison product, Skav. Skav is a Nordic dish traditionally made from reindeer meat. In the last 20 years or so, venison has also been used to make the dish. Skav is produced from high quality venison trim which is thinly sliced for quick cooking.
With an increase in the practice of adding chemicals and preservatives to meat products, chefs have complained that Skav can’t be fried directly on the pan or griddle without losing its juiciness.

Together with Chef Niclas Sjölund from Menigo Foodservice, Mountain River have produced a Skav free of chemical additives or preservatives that can be fried directly in the pan or griddle while retaining its juiciness.
After many hours in the kitchen, countless taste tests, and some adjustment to the venison trim processing, Mountain River is pleased to announce the launch of the new Skav product – available this autumn. The Mountain River Venison Skav is perfect for restaurants and commercial kitchens and can be used in a variety of dishes from traditional Nordic to Mexican cuisine.
